Our house rule: 8–10 savoury pieces per guest for a 1.5–2 hour afterwork, and 12–14 pieces (including 2–3 sweet) for a true 2.5–3 hour walking dinner that replaces a meal. We fine-tune together based on timing, season and your guests' profile.
3. What live cooking changes
A chef plating, flambéing or grilling in front of your guests turns the meal into entertainment. Live cooking creates a natural gathering point, paces the evening and guarantees pieces served minute-fresh, at the perfect temperature. It is also the ideal answer for large groups: several service points keep the flow smooth.
